spinach is considered a green leafy vegetable and originated about 2000 years ago in ancient persia from which it was introduced to India and ancient china via nepal as the “persian vegetable”. spinach grows in moist, nitrogen-rich soil in crops with many smaller leaves attached to one bigger root. its flowers are small, clouded together and range from yellow to light green in color. today spinach is used all over the world and highly popular in health oriented societies. special about spinach is how its taste varies according to the way it is prepared. when added to salad in a fresh state it tastes very different than sauteed or baked or after it has been canned or frozen.
